Pecan Balls
- 2 sticks margarine
- 1 c. light brown sugar
- 1 1/2 c. chopped pecans
- 1 c. dark brown sugar
- 1/2 c. confectioners sugar
- 1 1/2 Tbsp. water
- 1 large pkg. chopped dates
- 1 1/2 Tbsp. vanilla
- 1 can Baker's flaked coconut
- 4 c. Rice Krispies
- Add brown sugars to melted margarine; stir until dissolved. Add the dates and 1 1/2 tablespoons water to sugar, margarine and date mixture.
- Cook for 6 minutes, stirring all the time.
- Take off stove; add coconut, pecans and vanilla.
- Let cool until you can handle it.
- Add Rice Krispies.
- Mix well and roll in small balls.
- Drop in a plastic bag with 1/2 cup confectioners sugar. Lay them on foil until cool.
- Store in plastic bowl until ready to serve.
- (Very good to serve at Christmas.)
