Lyle'S Chili Con Carne
- 1 1/2 lb. ground beef
- 1/2 lb. ground pork
- 3 medium onions, chopped
- 1/4 c. celery, chopped
- 1 (No. 303) can kidney, red or chili beans
- 2 (No. 303) cans tomatoes
- 1 heaping Tbsp. chili powder per lb. meat
- 8 oz. tomato sauce
- 2 tsp. salt
- pinch of ground cumin (comino; use with caution)
- cayenne pepper to taste
- Stir and brown off meat in skillet or open saucepan; drain off any fat or water that renders out.
- Add onions and celery to the meat and stir.
- Cook until the vegetables are clear.
- In a pot, add all the ingredients together; cover and cook over low heat, the slower, the better (1 to 1 1/2 hours).
- Perhaps it would be better for guests to add cayenne pepper to their taste when served. Serves about 8.
