Buttermilk Potatoes(So Creamy!)
- 12 oz. baking potatoes, peeled and quartered
- 1 Tbsp. minced onion flakes
- 1/8 tsp. garlic powder
- 1 (8 oz.) can mushroom pieces, drained
- salt to taste
- 1/4 tsp. pepper
- 1/4 tsp. dried thyme
- 1/4 c. buttermilk
- 1 Tbsp. plus 1 tsp. wheat germ or dry bread crumbs
- 2 Tbsp. plus 2 tsp. reduced-calorie margarine
- Cook potatoes, covered, in boiling water, until tender, about 20 minutes.
- Drain.
- Preheat oven to 400u0b0.
- In a medium bowl, mash potatoes.
- Add onion flakes, garlic powder, mushrooms, salt, pepper, thyme and buttermilk.
- Mix well.
- Place mixture in a 1-quart baking dish that has been sprayed with a nonstick cooking spray.
- Sprinkle with wheat germ.
- Dot with margarine.
- Bake, uncovered, 15 minutes, until hot and lightly browned.
- Makes 4 servings.
