Green And White Salad With Blue Cheese Dressing
- Dressing:
- 1/3 cup fat-free cottage cheese
- 1/3 cup fat-free sour cream
- 1/4 cup (1-ounce) crumbled blue cheese
- 2 tablespoons 1% low-fat milk
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- 1 garlic clove, minced
- Salad:
- 2 1/2 cups (1-inch) chopped iceberg lettuce
- 2 cups (1-inch) chopped curly leaf lettuce
- 3/4 cup (1/4-inch) diced cucumber
- 1/3 cup (1/4-inch) diced celery
- 1/4 cup thinly sliced green onions
- To prepare dressing, combine the first 7 ingredients in a food processor or blender, and process until smooth, scraping sides of bowl once.
- To prepare salad, combine lettuces, cucumber, celery, and onions in a large bowl. Add dressing; toss well. Serve immediately.
