Broccoli With Cheese Sauce
- 2 lb. fresh broccoli
- 2 Tbsp. all-purpose flour
- 1/4 tsp. salt
- 2 slices low-fat process American cheese, torn into small pieces
- 2 Tbsp. diet margarine
- 1 c. skim milk
- 1/8 tsp. white pepper
- Trim off large leaves of broccoli and remove tough ends of lower stalks.
- Wash broccoli thoroughly and separate into spears. Cook broccoli covered in a small amount of boiling salt water for 10 minutes or until crisp and tender.
- Drain well and keep warm. Melt margarine in a heavy saucepan over low heat.
- Add flour, stirring until smooth.
- Cook 1 minute, stirring constantly. Gradually add milk and cook over medium heat, stirring with a wire whisk until thick and bubbly.
- Add cheese, salt and pepper.
- Stir until cheese melts.
- Serve sauce over broccoli.
- About 24 calories per serving plus 20 calories per tablespoon of sauce.
