Frosted Orange Drops
- 3/4 cup sugar
- 1/3 cup stick margarine, softened
- 1/4 cup thawed orange juice concentrate, undiluted
- 1 egg
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 2 teaspoons grated orange rind
- 1/4 teaspoon salt
- Vegetable cooking spray
- 3/4 cup sifted powdered sugar
- 1 tablespoon orange juice
- Cream the sugar and margarine at medium speed of a mixer until light and fluffy (about 3 minutes). Add orange juice concentrate and egg; beat well. Combine flour, baking soda, orange rind, and salt; stir well. Gradually add to creamed mixture, beating well.
- Drop dough by level tablespoons onto baking sheets coated with cooking spray. Bake at 350u0b0 for 12 minutes or until lightly browned; let cool on pans 1 minute. Remove from pans; let cool completely on wire racks.
- Combine the powdered sugar and 1 tablespoon orange juice; stir well, and drizzle over cooled cookies.
