Mushroom Salad With Maple Dressing
- 2 tablespoons lime juice
- 2 tablespoons maple syrup
- 1/4 teaspoon low-sodium soy sauce
- 1/4 teaspoon sesame oil
- 1/8 teaspoon black pepper
- 1 1/2 teaspoons vegetable oil
- Cooking spray
- 1 (8-ounce) package button mushrooms, quartered
- 6 cups gourmet salad greens
- 1/3 cup chopped green onions
- 1 tablespoon finely chopped fresh cilantro
- Combine the first 5 ingredients in a small bowl, and stir well with a whisk.
- Heat vegetable oil in a large nonstick skillet coated with cooking spray over medium-high heat. Add mushrooms; saute for 6 minutes or until tender. Remove from heat; add maple mixture, tossing to coat. Combine greens, onions, and cilantro in a large bowl. Add mushroom mixture, tossing to coat. Serve immediately.
