Stuffed Green Peppers Parmesan
- 6 ounce lean, ground beef
- 1/4 cup chopped onion
- 1/4 cup fresh mushrooms
- 1/4 teaspoon paprika
- 1/4 teaspoon garlic powder
- 1/2 teaspoon worcestershire sauce
- 1/2 teaspoon quick cooking brown rice
- 2 bell peppers
- 2 teaspoon low sodium parmesan cheese
- 1/3 tomato (medium)
- Preheat oven to 350 degrees F. Cook rice according to package directions and set aside. Chop mushrooms. Heat olive oil in a nonstick skillet to medium high heat and brown the meat with the onions and mushrooms. Add the Worcestershire sauce and seasonings; stir in the rice to mix thoroughly. Rinse and scoop out the peppers. Place them in a shallow baking pan with a small amount of water. Rinse and slice tomato. Stuff the peppers with the meat mixture and top with tomato slices and cheese. Bake for about 35-40 minutes and serve hot. Enjoy!
