Molasses-Prune Muffins
- 2 1/2 cups all-purpose flour
- 1 cup quick-cooking oats
- 3/4 cup sugar
- 1/4 cup toasted wheat germ
- 1 tablespoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup finely chopped pitted prunes
- 1 cup low-fat buttermilk
- 1/2 cup light ricotta cheese
- 3 tablespoons vegetable oil
- 2 tablespoons molasses
- 1 tablespoon vanilla extract
- 2 large eggs
- Cooking spray
- Preheat oven to 400u0b0.
- Combine first 8 ingredients in a large bowl. Stir in prunes; make a well in center of mixture. Combine buttermilk and next 5 ingredients (buttermilk through eggs); stir well with a whisk. Add to flour mixture, stirring just until moist. Spoon batter into 18 muffin cups coated with cooking spray.
- Bake at 400u0b0 for 18 minutes or until done. Remove from pans immediately, and cool on a wire rack.
