Brandied Nectarines
- 10 medium nectarines
- 1 cup sugar
- 1 cup water
- 1/2 cup plus 2 tablespoons brandy, divided
- 2 tablespoons vanilla extract
- 1/2 cup whipping cream
- 2 tablespoons sifted powdered sugar
- Fresh raspberries
- Mint leaves
- Place nectarines in a wire basket or cheesecloth, and dip into boiling water 1 minute. Plunge nectarines in cold water; drain. Remove skin.
- Combine nectarines, sugar, and water in a medium saucepan; bring to a boil. Reduce heat, and simmer 1 minute. Stir in 1/2 cup brandy and vanilla; chill thoroughly.
- Drain nectarines, and place each in a chilled individual dessert dish. Combine whipping cream, powdered sugar, and remaining brandy, mixing well. Spoon over nectarines. Garnish with raspberries and mint leaves.
