Crab - Mushroom - Cheese Quiche

  1. Bake pastry shell at 450 degrees for 10 minutes.
  2. Drain mushrooms.
  3. Save liquid.
  4. Saute mushrooms in butter for 2 minutes. Scatter in pie shell.
  5. Scatter crab meat and cheese over mushrooms. Mix sour cream and mayonnaise with mushroom liquid, salt and flour. Add enough light cream to make 2 cups.
  6. Blend in eggs and pepper sauce and pour into pastry shell.
  7. Bake at 350 degrees for 55 minutes or until set.
  8. Let stand 15 minutes before cutting.
  9. Yield: 6 servings.
