Cottontail Club(Daddy'S Stuff)
- 6 pork chops
- 6 pieces round steak
- 6 pieces venison steak
- salt and pepper
- garlic salt
- sage
- Italian seasoning
- 2 medium onions, chopped
- 2 (16 oz.) cans tomato sauce
- 2 mild yellow mellow peppers
- 1/3 c. pepper juice from jar
- 1 c. Dago red wine
- water to cover meat
- Sear all meat in olive oil.
- Season with salt, pepper, garlic salt, sage and Italian seasoning.
- Remove meat from pan and saute onions, then put meat back in pan.
- Add tomato sauce, diced peppers and juice.
- Add water to cover meat.
- Simmer 1/2 hour and add wine.
- Simmer another 1 1/2 hours.
- Thicken with flour.
- Add a dash of soda just before serving (blend fat into gravy).
- Serve over mashed potatoes, rice or polenta.
- Seasonings may be adjusted to taste.
