Moravian Orange Cake(Makes 2 Cakes)
- 5 to 6 c. unsifted flour
- 2/3 c. sugar
- 1 tsp. salt
- 2 pkg. dry yeast
- 1/3 c. margarine, softened
- 1 c. very warm tap water
- 1 c. mashed potatoes, at room temperature
- 2 eggs, at room temperature
- 1/2 c. margarine
- 2 c. light brown sugar, firmly packed
- 2 Tbsp. orange juice
- 1 tsp. ground cinnamon
- 1 tsp. grated orange peel
- In a large bowl, thoroughly mix 1 1/2 cups flour, sugar, salt and undissolved yeast.
- Add softened margarine.
- Gradually add tap water to dry ingredients and beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally.
- Add potatoes, eggs and 1/2 cup of flour.
- Beat at high speed 2 minutes.
- Stir in enough additional flour to make a soft dough.
- Turn out onto lightly floured board; knead until smooth and elastic, about 8 to 10 minutes.
- Place in greased bowl, turning to grease top.
- Cover and let rise in warm, draft-free place until double in bulk, about 1 hour.
