Moravian Orange Cake(Makes 2 Cakes)

  1. In a large bowl, thoroughly mix 1 1/2 cups flour, sugar, salt and undissolved yeast.
  2. Add softened margarine.
  3. Gradually add tap water to dry ingredients and beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally.
  4. Add potatoes, eggs and 1/2 cup of flour.
  5. Beat at high speed 2 minutes.
  6. Stir in enough additional flour to make a soft dough.
  7. Turn out onto lightly floured board; knead until smooth and elastic, about 8 to 10 minutes.
  8. Place in greased bowl, turning to grease top.
  9. Cover and let rise in warm, draft-free place until double in bulk, about 1 hour.
