Tamale Pie
- 2 lb. lean hamburger
- 2 medium red peppers, chopped
- 1 medium onion, chopped
- 1 (11 oz.) can nacho cheese soup
- 1 can ripe olives, sliced
- 1 (8 oz.) jar mild chunky salsa
- 1/4 c. water
- 2 (8 oz.) boxes cornmeal mix
- 3/4 c. grated Co-Jack cheese
- cherry tomatoes, cut in 1/2
- Brown hamburger, onion and peppers in a large pan.
- Drain fat. Stir in soup, salsa, water and olives.
- Reduce heat; simmer 5 minutes.
- Meanwhile, prepare cornmeal mixes according to package. Put 1/2 in greased 13 x 9-inch pan.
- Then layer hot meat mixture real carefully.
- Add remaining cornmeal on top.
- Bake 35 minutes in 350u0b0 oven.
- Remove from oven; top with grated cheese and halved cherry tomatoes.
