Hot Enchilada Squares
- 1 lb. ground beef
- 1 c. chopped onions
- 4 eggs, beaten
- 8 oz. tomato sauce
- 1 can evaporated milk
- 2 1/2 tsp. chili powder
- dash of Tabasco sauce
- 1/4 tsp. cumin
- 1/4 tsp. oregano
- 1/2 c. sliced black olives
- 1/4 c. diced green chilies
- 2 c. corn chips or tortilla chips, crumbled
- 1 c. shredded Cheddar cheese
- Crumble ground beef and onion in frying pan; brown and drain. Pour meat mixture in a 9 x 13 x 2-inch baking dish. In bowl, combine eggs, tomato sauce, milk, chili powder, Tabasco sauce, cumin and oregano. Pour over meat; sprinkle with olives, chilies and chips. Bake, uncovered, 25 minutes. Sprinkle with cheese and cook another 5 minutes.
