Skillet Barbecued Turkey Sandwiches
- 2 teaspoons reduced-calorie margarine
- 1 large onion, thinly sliced
- 1/2 teaspoon sugar
- 1 tablespoon cider vinegar
- 12 ounces turkey tenderloin, cut into thin slices
- 1/2 cup hickory-flavored barbecue sauce
- 4 (1.8-ounce) onion sandwich buns, split and toasted
- Heat margarine in a large nonstick skillet over medium-high heat until margarine melts. Add onion slices; cook, stirring constantly, 1 minute. Cover, reduce heat, and cook 6 minutes or until tender; sprinkle with sugar. Cook, uncovered, over medium-high heat, stirring constantly, 1 minute. Add vinegar; cook 2 additional minutes, stirring occasionally. Remove onion from skillet; cover and keep warm.
- Add turkey slices to skillet; cook over medium-high heat 3 minutes. Stir in barbecue sauce; reduce heat, and simmer, uncovered, 5 minutes or until turkey is done. Spoon turkey and sauce evenly onto bottom halves of buns; top with onion. Place top halves of buns over onion.
