Whole Wheat-Banana Muffins
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1/4 cup toasted wheat germ
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups mashed very ripe banana (about 3 large)
- 1/3 cup
- 1/4 cup vegetable oil
- 1 large egg, lightly beaten
- Cooking spray
- Preheat oven to 350u0b0.
- Lightly spoon flours into dry measuring cups; level with a knife. Combine flours and next 4 ingredients in a large bowl; make a well in center of mixture. Combine banana and next 3 ingredients; add to dry ingredients, stirring just until moist.
- Spoon mixture into muffin cups coated with cooking spray, filling two-thirds full. Bake at 350u0b0 for 20 minutes. Serve warm.
