Bits 'O Brickle Cookies
- 6 oz. pkg. (1 c.) Bits 'O Brickle
- 1 1/2 Tbsp. liquid shortening
- 6 Tbsp. flour, unsifted
- 1/2 c. butter
- 6 Tbsp. sugar
- 6 Tbsp. packed brown sugar
- 1/2 tsp. vanilla
- 1 egg
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1 1/4 c. plus 2 Tbsp. unsifted flour
- Preheat oven to 325u0b0.
- In a small bowl mix Bits 'O Brickle with liquid shortening until evenly coated, then stir in 6 tablespoons flour until well coated.
- Set aside.
- In a large bowl, combine butter, sugar, brown sugar and vanilla.
- Beat until creamy.
- Beat in egg.
- Gradually add salt, baking soda and flour.
- Mix well. Stir in coated Bits 'O Brickle.
- Drop by rounded teaspoonfuls onto greased cookie sheets.
- Bake at 325u0b0 for 10 to 12 minutes.
- Makes 50 (2-inch) cookies).
