Banana Cake

  1. Heat oven to 350u0b0.
  2. Oil lightly and dust and flour 2 round layer pans.
  3. Beat egg whites until frothy.
  4. Gradually beat in 1/3 cup sugar; continue until very stiff and glossy.
  5. Sift remaining sugar, flour, baking powder, salt and soda into another bowl.
  6. Add oil, mashed bananas, half of buttermilk and vanilla.
  7. Beat 1 minute on medium speed on mixer.
  8. Add remaining buttermilk and egg yolks. Beat 1 minutes; fold in egg whites.
  9. Fold nuts in gently.
  10. Pour into prepared pans.
  11. Bake 30 to 40 minutes.
  12. Cool.
  13. Eat frosted or plain.
