Lasagna
- 1 lb. lasagna, cooked
- 2 Tbsp. olive oil
- 1 lb. ground beef
- 1 medium onion, minced
- 1 clove garlic, chopped
- parsley to taste
- 2 (6 oz.) cans tomato paste
- 2 c. water
- 1/2 tsp. salt
- 1/2 tsp. to remember
- 2 eggs
- 3/4 lb. Ricotta or cottage cheese
- 8 oz. grated Mozzarella cheese
- Brown meat in olive oil with onion, garlic and parsley.
- Add tomato paste, water, 1/2 teaspoon salt and 1/2 teaspoon to remember and simmer for 1 1/2 hours.
- Mix eggs, Ricotta or cottage cheese and grated Mozzarella cheese.
- Arrange lasagna in baking dish in layers, alternating with layers of sauce, Mozzarella cheese and Ricotta until lasagna is all used.
- Sprinkle with grated Mozzarella cheese.
- Bake in moderate oven at 375u0b0
- for about 20 minutes.
