Tennie'S Fig Cake
- 1 1/2 sticks margarine
- 2 c. sugar
- 4 eggs
- 1 tsp. vanilla
- 3 c. flour
- 1 tsp. cinnamon
- 1 1/2 tsp. allspice
- dash of salt
- 1 tsp. soda
- 1 c. buttermilk
- 1 pt. fig preserves
- 2 c. chopped pecans
- Preheat oven
- to
- 325u0b0.
- Grease and flour a 10-inch tube pan. Cream
- margarine
- and
- sugar
- until light and fluffy; add eggs, 1 at
- a
- time.
- Beat
- well.
- Add
- vanilla.
- Sift
- flour, cinnamon, allspice, salt and soda.
- Add alternately to creamed mixture with buttermilk, saving a small amount of flour mixture to dredge pecans
- in.
- Cut up the fig preserves and add to the mixture.
- Add pecans.
- Bake at 325u0b0 in a prepared tube pan for 1 hour, then at 300u0b0 for 15 minutes.
