Strawberry Pie
- 1 (10-inch) deep dish pie shell or 2 small shells, baked
- 3 qt. fresh strawberries
- 1 1/2 c. sugar
- 6 Tbsp. cornstarch
- 2/3 c. water
- red food coloring
- 1 c. heavy cream
- 1 1/2 Tbsp. instant vanilla pudding
- In saucepan, combine sugar and cornstarch.
- Stir in washed strawberries and water.
- Bring to boil, stirring constantly.
- Cook and stir 2 minutes.
- Remove from heat, stir in food coloring. Chill 30 minutes or until mixture is slightly warm.
- Fold in remaining berries.
- Pile into pie shell.
- Chill 2 to 3 hours.
- In small mixing bowl whip the cream until soft peaks form.
- Sprinkle pudding over cream and beat until stiff.
- Pipe around edge of pie or dollop on individual slices.
