Poached Salmon With Horseradish Sauce
- 1/4 cup fat-free mayonnaise
- 1/4 cup plain fat-free yogurt
- 2 teaspoons prepared horseradish
- 1 1/2 teaspoons chopped fresh or frozen chives
- 1 1/2 teaspoons lemon juice
- 4 cups water
- 1 teaspoon peppercorns
- 1 lemon, sliced
- 1 carrot, sliced
- 1 celery stalk sliced
- 4 (6-ounce) salmon fillets
- Lemon wedges (optional)
- Fresh celery leaves (optional)
- Combine first 5 ingredients. Cover and chill.
- Combine water and next 4 ingredients in a large skillet; bring to a boil over medium heat. Cover, reduce heat, and simmer 10 minutes. Add salmon to skillet; cover and simmer 10 minutes.
- Remove skillet from heat; let stand, covered, 8 minutes. Remove fish from skillet. Discard liquid and vegetables.
- Serve with horseradish mixture. If desired, garnish with lemon wedges and celery leaves.
