Coconut And Quinoa Pancakes Make The Perfect Healthy Stack

  1. Place all dry ingredients in a medium mixing bowl. Mix well.
  2. Place all wet ingredients except melted butter in a separate medium bowl and whisk well.
  3. Add the wet ingredients to the dry ingredients and fold together with a rubber spatula. Do not over mix.
  4. Fold in melted butter until incorporated.
  5. Heat a lightly oiled frying pan over medium heat.
  6. Pour batter into the pan, using approximately 1/4 cup for each pancake.
