Rolled Sandwiches
- Apple & Walnut Filling:
- 4 slices honey nut bread
- 4 ounces fat-free or light cream cheese, softened
- 1 apple, finely chopped
- 2 tablespoons chopped walnuts
- 1 teaspoon lemon juice
- 1/2 teaspoon cinnamon
- Tea Party-Style Chicken Filling:
- 6 slices multigrain bread
- 4 ounces fat-free or light cream cheese, softened
- 1/2 cup chopped cooked chicken breast
- 1/2 cup diced celery
- 1/2 cup red grapes, halved
- Meat & Spinach Filling:
- 4 slices honey 7-grain bread
- 4 tablespoons Dijon mustard
- 1/2 cup shredded mozzarella cheese
- 1 cup baby spinach leaves
- 4 slices turkey or ham
- Prepare desired filling:
- For the apple and walnut filling, stir together all ingredients, except bread, until combined.
- For the tea party-style chicken filling, stir together all ingredients, except bread, until combined.
- For the meat and spinach filling, gather all ingredients.
- To assemble sandwiches, place a slice of bread on a cutting board (see suggested bread choices for fillings) and roll with a rolling pin to compress the bread and make it easier to roll. Spread about 1/4 cup of the desired mixed filling evenly over the bread. Starting from the bottom edge of bread, roll towards the top edge, using slight pressure to hold sandwich together. For the meat and spinach filling, spread 1 tablespoon Dijon mustard on a slice of bread. Sprinkle 2 tablespoons mozzarella cheese evenly over surface. Arrange some spinach leaves over the cheese. Place a slice of turkey or ham over the spinach. Roll as directed above. Secure sandwich with a toothpick (be sure to remove the toothpick before eating!). Recipe provided by the National Pasta.
