Boneyard Pupcakes
- 1 cup (about 4 oz.) whole-wheat flour
- 1/4 cup uncooked regular rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/8 teaspoon ground cinnamon
- 1 ripe banana, mashed
- 1/4 cup honey
- 1/4 cup coconut oil, melted
- 1/4 cup water
- 2 large eggs
- 1/2 cup, plus 1/3 cup creamy peanut butter, divided
- 4 ounces reduced-fat cream cheese, softened
- 1 cup carob sandwich cookies with peanut butter filling dog treats, crushed
- 24 miniature bone-shaped dog treats
- Preheat oven to 350u0b0F. Whisk together flour, oats, baking powder, baking soda, and cinnamon in a large bowl. Stir together mashed banana, honey, coconut oil, water, eggs, and 1/2 cup of the peanut butter in a separate bowl. Add banana mixture to flour mixture; stir just until combined.
- Pour batter evenly into a 24-cup miniature muffin pan lined with paper baking cups. Bake until pupcakes are cooked through and golden brown, 12 to 15 minutes. Cool completely in pan on a wire rack, about 20 minutes.
- Remove pupcakes from pan. Stir together cream cheese and remaining 1/3 cup peanut butter until well combined. Spread frosting evenly over pupcakes, and top evenly with crushed cookies. Gently press in 1 dog bone treat into center of each pupcake.
