Sweet And Sour Chicken
- 1/2 c. flour
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 to 3 lb. boneless chicken, cut in pieces
- 1/3 c. oil
- 1 (13 1/2 oz.) can chunk pineapple
- 1 c. sugar
- 3/4 c. vinegar
- 1/2 tsp. ginger
- 2 Tbsp. cornstarch
- 1 Tbsp. soy sauce
- 1 cube chicken bouillon
- 1 c. sliced carrots
- 1 c. green pepper, chopped
- Combine flour, salt and pepper in a bag.
- Add chicken pieces and shake to coat well.
- Heat oil in skillet; add chicken and brown.
- Meanwhile, in saucepan, combine pineapple juice from canned pineapple plus enough water to make 1 1/2 cups liquid, sugar, vinegar, ginger, cornstarch, soy sauce and bouillon cube. Bring to boil and boil until all ingredients are dissolved.
- Place browned chicken in large flat baking dish and pour sauce over top. Bake at 350u0b0 for 30 minutes.
- Add vegetables and pineapple to meat.
- Return to oven for an additional 30 minutes.
