Sunday Soup Supper
- 1 1/2 lb. ground beef
- 1 egg, slightly beaten
- 1/2 c. bread crumbs
- 1/4 tsp. salt
- 1 Tbsp. chopped parsley
- 2 Tbsp. butter
- 1 can condensed beef broth (undiluted)
- 1 can tomato (undrained)
- 1 envelope dry onion soup mix
- 2 c. sliced pared carrots
- 1/4 c. chopped celery tops
- 2 cans string beans, drained
- 1/4 c. chopped parsley
- 4 white potatoes, peeled and cubed
- 1/4 tsp. pepper
- 1/4 tsp. dried oregano
- 1/4 tsp. dried basil
- 1 bay leaf
- Meatballs:
- In medium bowl, combine beef, egg, 3 tablespoons water, bread crumbs, salt and 1 tablespoon parsley.
- Mix by hand until well combined.
- Shape into balls.
- Brown in butter in a 5-quart Dutch oven, one layer at a time.
- Set aside.
- Drain fat.
