Beth'S Pot Roast Meat Loaf
- 1 lb. ground lean beef
- 2/3 c. evaporated milk (can use regular milk)
- 1/3 c. fine dry bread crumbs
- 1/4 c. catsup or chili sauce
- 1 tsp. salt
- 2 tsp. Worcestershire sauce
- 1/4 tsp. pepper
- 3 medium potatoes
- 3 medium onions
- 3 medium carrots
- 3 tsp. dried parsley flakes
- 1 tsp. salt
- few grains pepper
- Peel and slice (1/4-inch thick) the vegetables.
- Mix dried parsley flakes, salt and pepper.
- Place vegetables in layers around the meat loaf.
- Sprinkle each layer with a part of the salt mixture.
- Cover pan tightly with foil.
- Bake in a 375u0b0 oven for 1 hour, or until vegetables are tender.
- Uncover and bake 10 minutes longer to brown meat.
