Beth'S Pot Roast Meat Loaf

  1. Peel and slice (1/4-inch thick) the vegetables.
  2. Mix dried parsley flakes, salt and pepper.
  3. Place vegetables in layers around the meat loaf.
  4. Sprinkle each layer with a part of the salt mixture.
  5. Cover pan tightly with foil.
  6. Bake in a 375u0b0 oven for 1 hour, or until vegetables are tender.
  7. Uncover and bake 10 minutes longer to brown meat.
