Pumpkin-Apple Streusel Muffins
- 2 1/2 c. flour
- 2 c. sugar
- 1 Tbsp. pumpkin pie spice
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 eggs, beaten
- 1 c. solid pack pumpkin
- 1/2 c. oil
- 2 c. peeled apples, finely chopped
- 2 Tbsp. flour
- 1/4 c. sugar
- 1/2 tsp. cinnamon
- 4 tsp. butter
- Combine first 5 ingredients in a bowl and set aside.
- Combine eggs, pumpkin and oil.
- Add to first mixture.
- Stir until moistened.
- Add chopped apples and mix.
- Spoon batter into greased or paper-lined muffin cups, filling 3/4 full.
- In small bowl, mix flour, sugar and cinnamon.
- Cut in butter until mixture is crumbly.
- Sprinkle over batter.
- Bake at 350u0b0 for 35 to 40 minutes.
