Thai Style Sausage Soup
- 2 tablespoons olive oil
- 1 1/2 cup onion, 1/4 dice
- 1 cup celery, 1/4 dice
- 2 cups shiitake mushrooms, sliced
- 1 1/2 teaspoons curry paste
- 1 package Jimmy Dean Hot Roll Sausage, cooked, crumbled, drained
- 3 cups chicken stock
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper, ground
- 13 ounces coconut milk
- 3 tablespoons fresh cilantro, chopped
- Heat 2 tablespoons olive oil in a small pot over medium-high heat. Place the onion, celery, shiitake mushrooms and curry paste in the pot. Add the sausage and continue to cook for 2 minutes. Cook for 4 minutes and then add the chicken stock, salt and pepper. Simmer soup for 10 minutes and then add the coconut milk. Cook for 3 minutes. Garnish soup with the cilantro.
