Vaca Frita(Fried Cow)
- 2 to 3 lb. beef brisket
- 2/3 c. Vino Seco (Spanish cooking wine
- 1 bay leaf
- 1 large onion
- 2 to 3 cloves garlic, chopped
- 2 pkg. Goya seasoning (Cuban seasoning)
- 3 to 4 sour oranges, juiced (or may use a combination of 1/2 sweet orange juice, 1/4 lemon juice and 1/4 lime juice)
- 1 lime, juiced
- 2 large onions, sliced thin
- 1/3 c. olive oil or vegetable oil
- salt to taste
- pepper to taste
- garlic powder to taste
- Cook brisket in pressure cooker or on stove top as with a pot roast.
- For the liquid, add Vino Seco and enough water to cover meat.
- Add to liquid an onion, cut in eighths, the bay leaf, garlic and 2 packets Goya seasoning.
- Cook until the brisket shreds.
