Pumpkin Bran Muffins
- 1 1/4 c. all-purpose flour
- 1/4 c. sugar
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 2 tsp. baking powder
- 1 c. Nabisco 100% bran cereal
- 1 c. (1/2 can) pumpkin
- 3/4 c. skim milk
- 1/3 c. light corn syrup
- 2 egg whites
- 1/2 c. raisins
- vegetable cooking spray
- Combine bran cereal, pumpkin, milk, corn syrup and egg whites in one bowl; set aside.
- Combine flour, sugar, salt, baking soda and baking powder together and add to first bowl, stirring just until moistened; add raisins.
- Spoon batter into 12 section muffin tin coated with cooking spray.
- Bake at 400u0b0 for 20 minutes; cool out of pans on wire rack.
- Makes 12.
- Based on 12 servings.
- Per serving: 159 calories; 43g fat; 284mg sodium; .25mg cholesterol.
