Tuna-Lettuce Bundles
- 2 large leaves leaf lettuce
- 1 (3 1/4 oz.) can Star-Kist tuna, drained and broken into small chunks
- 1/2 c. shredded red cabbage
- 1/4 c. shredded zucchini
- 1/4 c. alfalfa sprouts
- 1 Tbsp. reduced calorie Thousand Island or Blue cheese dressing
- pepper to taste
- 2 red or green bell pepper rings
- Trim stalks from lettuce leaves.
- In a small bowl, toss together tuna, cabbage, zucchini and sprouts.
- Stir in dressing; season to taste with pepper.
- Spoon 1/2 of the salad mixture in center of each leaf.
- Roll up leaves, enclosing filling.
- Secure lettuce bundles by slipping a bell pepper ring over each.
- Place bundles seam side down on plate.
- Makes 1 serving.
