Tuna-Lettuce Bundles

  1. Trim stalks from lettuce leaves.
  2. In a small bowl, toss together tuna, cabbage, zucchini and sprouts.
  3. Stir in dressing; season to taste with pepper.
  4. Spoon 1/2 of the salad mixture in center of each leaf.
  5. Roll up leaves, enclosing filling.
  6. Secure lettuce bundles by slipping a bell pepper ring over each.
  7. Place bundles seam side down on plate.
  8. Makes 1 serving.
