Banana Nut Bread
- 2 ripe bananas
- 2 eggs, beaten until light
- 1 tsp. vanilla
- 2 Tbsp. melted butter
- 2 c. flour
- 3/4 c. sugar
- 1 tsp. salt
- 1 tsp. baking powder
- 1/2 c. chopped walnuts
- 1/2 c. butter
- 1 c. sugar
- 1 1/4 c. flour
- 1/2 tsp. salt
- 1 tsp. baking soda
- 3 very ripe bananas
- 2 eggs
- 1 c. chocolate chips
- 1 tsp. vanilla
- 1/2 c. shortening, softened
- 1 c. sugar
- 2 eggs
- 3/4 c. mashed ripe bananas (2)
- 1 1/4 c. sifted flour
- 3/4 tsp. baking soda
- 1/2 tsp. salt
- Grease loaf pan.
- Cream shortening and sugar until light.
- Add eggs, one at a time, beating well after each.
- Stir in bananas. Sift together the dry ingredients.
- Add to banana mixture.
- Mix until well blended.
- Pour into greased 9 x 9 x 2-inch pan.
- Bake in moderate oven (350u0b0) for 30 to 35 minutes, or until tests done. (The riper the bananas the longer the baking time, up to an hour.)
