Susie'S Stuffed Mushrooms
- 12 large fresh mushrooms
- 1 medium onion, finely chopped
- 1/4 c. green pepper, finely chopped
- 1 small garlic clove, minced
- 4 oz. loose Italian sausage
- 1/2 c. seasoned bread crumbs
- 3 Tbsp. Parmesan cheese
- 1 Tbsp. spicy Italian herbs
- 1/4 tsp. salt
- dash of pepper
- 3/4 c. chicken broth
- Wash mushrooms.
- Remove and chop stems.
- Drain caps.
- Saute onion, pepper, sausage, garlic and stems until tender.
- Add bread crumbs, cheese, herbs, salt and pepper.
- Mix together.
- Add chicken broth as needed to make stuffing moist.
- Spoon mixture into mushroom caps.
- Place in baking dish, stuffing side up.
- Add remaining chicken broth and enough water to make 1/4-inch of liquid in bottom.
- Bake at 325u0b0
- for 25 to 30 minutes.
