Spicy Pumpkin Cookie
- 1/2 c. shortening
- 1 1/4 c. brown sugar
- 2 eggs, beaten
- 1 1/2 c. cooked pumpkin
- 1 tsp. vanilla
- 1 tsp. lemon extract
- 1 c. raisins, chopped
- 1 c. nuts, chopped
- 2 1/2 c. sifted flour
- 4 tsp. baking powder
- 1/2 tsp. salt
- 1/4 tsp. ginger
- 1/2 tsp. nutmeg
- 1/2 tsp. cinnamon
- Cream shortening.
- Add sugar gradually and continue beating until light.
- Add eggs and pumpkin and blend well.
- Add vanilla and lemon extract.
- Add raisins, nuts and dry ingredients that have been sifted together; mix well.
- Chill dough; drop by teaspoonfuls about 2 inches apart on greased cookie sheet.
- Bake at 375u0b0 for about 15 minutes.
- Will make 4 dozen cookies.
