Pumpkin Walnut Cake
- 3 c. flour
- 2 tsp. baking powder
- 2 tsp. soda
- 1 tsp. salt
- 3 1/2 tsp. cinnamon
- 4 large eggs
- 2 c. sugar
- 1 1/2 c. corn oil
- 1 lb. can pumpkin
- 1 c. chopped nuts
- confectioners sugar (if desired)
- On wax paper, sift together first 5 ingredients.
- In large bowl, beat eggs on high speed until yolks and whites are combined. Gradually add sugar, beating until lemon color (thick).
- Beating continually, pour in corn oil.
- With mixer at low speed, blend in sifted dry ingredients alternately with pumpkin, beginning and ending with dry ingredients.
- Beat until smooth after each addition.
- Stir in nuts.
- Turn into ungreased angel food pan. Bake in 350u0b0 oven for about 1 hour and 10 minutes.
- Cool on wire rack.
- Sprinkle with confectioners sugar if desired.
