German-Style Beef Brisket
- 1 (2 1/2-pound) beef brisket
- Vegetable cooking spray
- 4 1/2 cups sliced baking apple (about 2 large)
- 2 3/4 cups sauerkraut, drained
- 1 teaspoon caraway seeds
- 1 (14 1/4-ounce) can no-salt-added chicken broth
- 10 medium-size round red potatoes, quartered
- Trim fat from brisket. Place meat on a rack in a roasting pan coated with cooking spray. Arrange apple slices over meat; spoon sauerkraut over apple, and sprinkle with caraway seeds. Drizzle broth over and around brisket. Cover and bake at 325u0b0 for 1 1/2 hours.
- Arrange potato around meat; baste potato and meat with pan juices. Cover and bake 2 hours or until potato is tender.
- Transfer meat to a serving platter. Arrange apple, sauerkraut, and potato around meat; drizzle with 1 cup pan juices.
