Fresh Apple Cake
- 1 c. sifted flour
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1 tsp. salt
- 1 c. sugar
- 1/2 c. shortening
- 2 eggs
- 1 tsp. vanilla
- 2 1/2 c. finely chopped, pared apples
- 1 c. walnuts
- 1 Tbsp. flour
- Sift together flour, baking soda, cinnamon and salt.
- Cream together sugar and shortening until light and fluffy.
- Beat in eggs one at a time, beating well after each addition.
- Add vanilla.
- Add dry ingredients, beating well after each addition. Stir in apples.
- Combine walnuts and 1 tablespoon flour.
- Stir into batter.
- Pour into greased and floured 9-inch square baking pan.
- Bake in 350u0b0 oven 50 minutes or until cake tests done.
- Cool in pan on rack.
- Makes 9 servings.
