Tropical Muffins

  1. Preheat oven to 375u0b0.
  2. In medium mixing bowl, combine flour, sugar and baking powder.
  3. Cut in oleo with pastry blender or 2 knives until mixture resembles coarse meal.
  4. Add remaining ingredients and stir just until mixture forms a sticky dough and leaves sides of the bowl (do not overmix).
  5. Spray 12 muffin pan cups (2 1/2 inches) with nonstick cooking spray.
  6. Spoon an equal amount of pineapple mixture into each cup.
  7. Bake until muffins are golden brown, 30 to 35 minutes.
  8. Remove muffins to a wire rack and let cool.
  9. Serve immediately or wrap individually and freeze until ready to use.
