Seafood Crepes
- 8 crepes
- 1/2 c. fresh mushrooms, chopped
- 2 Tbsp. green onions, chopped
- 2 Tbsp. butter
- 2/3 c. cooked shrimp
- 1 (6 oz.) pkg. crab meat, thawed and drained
- 2 (3 oz.) pkg. cream cheese
- 1/2 c. light cream (half and half)
- 1 c. Swiss cheese, shredded
- 1 Tbsp. green onions, chopped
- Prepare crepes.
- Cook and stir mushrooms and 2 tablespoons onions in margarine until onions are tender.
- Stir in seafood, half and half and cream cheese.
- Cook over medium heat, stirring constantly, until cheese is melted.
- Spoon 1/4 of the filling down center of each crepe; roll up.
- Place in ungreased rectangular microwavable dish, 12 x 7 1/2 x 2-inches.
- Sprinkle with Swiss cheese.
- Microwave uncovered on High (100%) until cheese is melted and crepes are heated through, 4 to 6 minutes; sprinkle with 2 tablespoons onion.
