Hearty Minestrone Soup
- 4 slices bacon, finely chopped
- 1 c. chopped onion
- 1/2 c. chopped celery
- 2 cloves garlic, minced
- 1 tsp. crushed basil
- 1 can beef broth
- 1 can bean with bacon soup
- 2 soup cans water
- 1 (24 oz.) can tomatoes
- 1/2 c. uncooked ditalini or other small pasta
- 1 small zucchini, sliced
- 1 to 2 c. cabbage, cut in long thin shreds
- In a large pot, brown the bacon with the onion and celery. Add the garlic and basil and saute until vegetables are tender. Add soups, water and tomatoes.
- The tomatoes should be cut up a bit, but make sure all the juice goes into the soup.
- Bring to a boil.
- Add ditalini, zucchini and cabbage.
- Cover and reduce heat. Simmer 20 to 25 minutes, stirring occasionally.
