Hearty Minestrone Soup

  1. In a large pot, brown the bacon with the onion and celery. Add the garlic and basil and saute until vegetables are tender. Add soups, water and tomatoes.
  2. The tomatoes should be cut up a bit, but make sure all the juice goes into the soup.
  3. Bring to a boil.
  4. Add ditalini, zucchini and cabbage.
  5. Cover and reduce heat. Simmer 20 to 25 minutes, stirring occasionally.
