Baked Beans For A Crowd
- 1 1/2 lb. thick lean bacon, diced
- 2 large bottle catsup (28 oz. all together)
- 2 large onions, diced small
- 2 large green peppers, diced small
- 1/2 lb. butter
- 1/2 lb. brown sugar
- pepper to taste
- 4 large (50 or so oz.) cans pork and beans
- In a large skillet fry the bacon over medium heat until the fat is rendered.
- Remove the bacon to a dish, leaving about 3 tablespoons fat in skillet.
- Fry the onions in the bacon fat until light brown.
- Return the bacon to the skillet with the onions.
- Add diced peppers, catsup, pepper, brown sugar and butter.
- Stir until butter is melted.
- Cook over low heat 20 minutes.
- Pour the canned beans into a large shallow baking dish.
- Cover with the sauce and mix well.
- Bake uncovered at 350u0b0 for 2 1/4 hours.
- May be reheated at 300u0b0.
- The sauce alone may be frozen.
