Ginger-Lime Bars
- 1 1/4 cups low-fat honey graham cracker crumbs (9 sheets)
- 1/4 cup light butter, melted
- 2 tablespoons minced crystallized ginger
- 2 tablespoons granulated sugar
- Cooking spray
- 3 large eggs, lightly beaten
- 3/4 cup granulated sugar
- 2 teaspoons grated lime rind
- 1/3 cup fresh lime juice
- 3 tablespoons all-purpose flour
- 2 teaspoons grated peeled fresh ginger
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 2 teaspoons powdered sugar
- Preheat oven to 350u0b0.
- Combine first 4 ingredients in a mixing bowl; mix well. Press into an 8-inch square baking pan coated with cooking spray.
- Bake at 350u0b0 for 12 minutes; cool slightly on a wire rack.
- Whisk together eggs and next 7 ingredients until smooth. Pour egg mixture over prepared crust. Bake at 350u0b0 for 20 to 22 minutes or until set. Cool completely on wire rack. Sift powdered sugar evenly over top. Cut into bars.
