Venison Pie
- 3 lb. venison steak, in 1/2-inch cubes
- 1 1/2 tsp. salt
- 1 tsp. pepper
- 1/2 c. flour
- 1/2 lb. ham
- 3 Tbsp. butter
- 1 qt. water
- 1 tsp. onion soup mix
- 1 tsp. parsley flakes
- 1/4 tsp. rosemary
- 6 c. mashed potatoes
- 3 eggs
- Combine salt, pepper and flour in a bag.
- Add meat cubes; shake to coat.
- In large skillet, melt butter; brown venison and ham over medium heat.
- Add water, soup mix, parsley and rosemary. Cover and simmer 1 1/2 hours, adding more water if necessary to keep meat submerged.
- Whip together potatoes and eggs.
- Spread 4 cups of potato mixture over bottom and sides of oiled 8 x 14 x 2-inch baking dish.
- Bake in preheated oven at 350u0b0 for 5 minutes, then fill with venison mixture and top with remaining potatoes. Bake 30 minutes more.
