Spiced Pilaf
- 3/4 c. chopped dried apricots
- 1/4 c. chopped dates
- 8 Tbsp. olive oil
- 1 large onion, chopped
- 1 tsp. allspice
- 2 garlic cloves, chopped
- 1 1/2 c. long grain rice
- 2 1/2 c. beef stock or water
- 1 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 lb. lean ground lamb or beef
- 1 Tbsp. tomato paste
- 1 tsp. ground cumin
- 1 egg, beaten
- 1/2 c. pine nuts
- 2 Tbsp. chopped parsley
- 1 c. bread crumbs
- Soak the bread crumbs in 1/2 cup of water for 5 minutes. Squeeze dry and place in a bowl.
- Add meat, tomato paste, cumin and egg.
- Mix together thoroughly.
- Season with salt and pepper.
- With damp hands, roll the meat into balls about the size of walnuts.
