Hot Tomato Salad
- 4 yellow banana peppers
- 2 green banana peppers
- 2 jalapeno peppers
- 4 to 5 large tomatoes
- 2 garlic cloves, minced
- 1 tablespoon chopped fresh basil
- 1 tablespoon chopped fresh parsley
- 1 teaspoon chopped fresh rosemary
- 1 teaspoon chopped fresh oregano
- 2 ounces smoked Cheddar cheese, cubed (optional)
- 1/2 cup olive oil
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 teaspoons sugar (optional)
- Garnish: fresh basil sprig
- Remove and discard seeds from peppers and tomatoes. Dice peppers and tomatoes; place in a large bowl. Toss in garlic, herbs, and, if desired, cheese.
- Stir together oil, next 3 ingredients, and, if desired, sugar; add to tomato mixture, tossing to coat. Cover and chill 2 to 4 hours. Serve with a slotted spoon. Garnish, if desired.
