Red Beans And Sausage

  1. Crisp fry bacon and reserve.
  2. Saute chopped celery and onions in 3 to 4 tablespoons bacon grease until very soft.
  3. Add parsley and mashed garlic; saute for 5 minutes.
  4. Deglaze pot with broth; add presoaked prepared beans, bay leaves and crumbled bacon.
  5. Use seasonings to taste and bring to a simmer.
  6. Grill or bake sausage to remove grease.
  7. Cut into bite size pieces and add to beans. Simmer for at least 1 hour.
  8. All measurements are approximate (experiment).
  9. Serve over rice.
