Seafood Enchiladas(Great Low-Fat Recipe)

  1. In small mixing bowl, combine taco sauce and sour cream.
  2. Set aside.
  3. In a blender or food processor or bowl, combine cottage cheese, milk, garlic and salt.
  4. Cover and blend or process until mixture is smooth.
  5. Set aside.
  6. Reserve 1 tablespoon of green onion.
  7. Spread 1 tablespoon of taco sauce mixture over each tortilla.
  8. Top each with cheese, seafood and remaining green onion.
  9. Spoon remaining taco sauce mixture into bottom of a greased 12 x 7 1/2 x 2-inch baking dish.
  10. Roll up tortillas and place seam side down in baking dish.
  11. Pour cottage cheese mixture over tortillas; sprinkle with Parmesan.
  12. Bake, uncovered, at 350u0b0 for 25 to 30 minutes.
